This sort of salad is not normally my cup of tea but I am always trying to get myself to try new things so here goes!
For 2 servings:
Source
1/3 cup wild or brown rice
Goat Feta Cheese (small chunk)
1 Green apple
1 Red bell pepper
1 Celery stalk
2 Spring onions
1 garlic clove
Sunflower seeds (handful)
1 Lemon squeeze
1 tbsp Olive Oil
Salt and pepper to taste
Cook rice as directed. Chop up all the ingredients and add everything to a bowl.
